TURTLE CHEESE CAKE

Ingredients:
1 1/2 cups of graham cracker crumbs
1/2 cup butter, melted
1/3 granulated sugar
4 pkgs (8oz.each) cream cheese, softened
1 can (14 oz.) CARNATION sweetened condensed milk
4 large eggs
1/4 cup all-purpose flour
1 cup (8oz) sour cream
1 teaspoon vanilla extract
Ingredients for topping:
1 cup semi sweet chocolate chips
1 1/2 cup unsweetened baking chocolate (4 squares)
1/2 of pecan chips
Cooking Directions:
Preheat the oven to 350 F
For crust: Combine graham cracker crumbs, butter and sugar in a small
bowl. PRess onto bottom and 1 inch up side of ungreased 9-inch springform
pan.
Bake for 6-8 minutes. Cool on wire rack for 10 minutes.
For Cheesecake: Beat cream cheese, sour cream and sweetened condensed milk
in a large mix bowl. Beat in eggs, flour, vanilla extract. Pour into
crust. Bake for 50 minutes. Remove from oven. Let it cool down for a few
hours in the refrig before removing from the pan. Run a slim knife around
the edge of the pan to make sure to separate it from the pan.(Secret: to
prevent the cheese cake from cracking on the top, but a oven-safe bowl of
water in the oven on the bottom rack of the oven-- this keeps the air
moist and prevents cracking).
Turtle Topping Combine all chocolate together in a pan and warm it
over the stove until it melts. Mix in 1/3 cup of butter and mix together
until it is melted and a nice sauce. Pour over cool cheese cake and refrig
for another hour. Mix carmel topping and pecan chips together. Remove
cheese cake from refrig. Chocolate should be like a hard shell on top of
the cheese cake. Pour carmel topping over the top before serving. Let's
